"Fort Kniepass Kulinarik": Gastronomic hotspot in the Saalachtal valley
With the "Fort Kniepass Kulinarik" restaurant, a culinary hotspot has also been created in the historic fort. The two hosts Eva Schevers and Thomas Hollaus serve specialties made from high-quality regional products, which they source from producers , farmers and collectors from the surrounding area and the Salzburg region. The interior of the new, modern, bright restaurant has seating for over 80 guests. When the weather is fine, the garden invites you to enjoy a break in the open air.
Focus on fermentation: from rural tradition to modern nutrition
Eva Schevers and Thomas Hollaus focus on fermented foods in their gastronomic concept. Whether kimchi, sourdough or kombucha - at "Fort Kniepass Kulinarik" you can experience a new interpretation of this traditional farming technique.In collaboration with nutritionist and fermentation expert Karin Buchart , the restaurateurs process cabbage, vegetables, berries and oat flakes that mature in jars, balloons, ceramic vessels and handmade wooden barrels, prepare apple cider vinegar, extract activating oximes and brew aromatic, tangy kombucha.

In the future, Fort Kniepass will also become a center for culinary education - a fermentation center! In collaboration with expert Karin Buchart, the restaurateurs have developed a comprehensive workshop program on the topic of fermentation.
Bistro area: Tasty snacks to take away
The gastronomic offer is complemented by a bistro area, where lovingly filled sour sandwiches, sweet croissants filled with apricot, pistachio and chocolate nougat and, of course, drinks, coffee and cool shakes are available to take away.
