Vegetable fermentation: brined vegetables & dry vegetable fermentation

Brined vegetables are the simplest version of fermented vegetables. Nevertheless, it can be tasty and variable, depending on the spices, herbs and fruits we add.

For dry vegetable fermentation , we only activate the plant juice. We combine vegetables and season them in the traditional Alpine way or take inspiration from other countries. This results in sauerkraut with new flavors and European kimchi. Kimchi is a popular, aromatic and safe version of dry vegetable fermentation.
